With zucchini season in full force, we combine the fast-food genius of tator tots with a healthy serving of squash to make a more nutritious, low-carb, baked “Zucchini Tot” – a great alternative side dish the kids will enjoy making as well.

Ingredients

2 zucchini, shredded

½ teaspoon salt

1 egg

½ cup parmesan

½ cup panko

1 tablespoon olive oil

Serving sauce of choice

Directions

  1. Preheat oven to 400 degrees. Line a baking sheet with parchment
  2. Place zucchini on a clean, lint-free kitchen towel or paper towels. Wrap towel around the sides and squeeze the excess water from the zucchini. Remove zucchini from towel and place in a bowl.
  3. Add the salt, egg, parmesan cheese, panko and olive oil in the bowl with the zucchini and stir until combined. Scoop out tablespoon-sized portions and shape to look like tater tots. You can also use a small cookie cutter to create fun shapes. Place on baking sheet leaving about ½-inch distance. Bake 15-20 minutes, until golden.
