With all of the dips on Super Bowl Sunday, chips are typically served in abundance. Which is why we love this sweet potato twist on nachos! And to make this recipe even easier, we’re using frozen sweet potato fries so make sure to pick up your favorite kind. Not a sweet potato person? Opt for regular fries!

- 2 lbs frozen sweet potato fries
- 1 lb grated cheddar cheese
chipotle crema-
- 1/2 cup plain greek yogurt
- 1/4 cup mayo1-2 chipotles in adobo, seeds removed
- 1 clove garlic
- juice of 1/2 lime
optional baked toppings-
- black beans
- frozen corn
- red onion
- cherry tomatoes
- jalapeno slices
optional toppings for serving-
- guacamole
- pico de gallo
- cilantro
- lime wedges
Directions
1. Preheat oven to 425°F. Bake the sweet potato fries for 20 min-utes, turning the pan halfway through.
2. While the fries are baking, make the chipotle crema by combin-ing the greek yogurt, mayo, chipotles in adobo, garlic and the juice of 1/2 a lime in a blender. Blend until smooth and creamy. Salt and pepper to taste.
3. Remove the fries from the oven and top with the cheese. Layer on the baked toppings of your choice: black beans, corn, red onion, cherry tomatoes, and/or jalapeno slices. Return to the oven for ~10 minutes, until cheese is bubbly and melted.
4. Remove from the oven and top with additional desired toppings: guacamole, pico de gallo, cilantro, lime and/or chipotle crema.
